Full ingredients list:
1¼ cups self-raising flour
1 teaspoon ground ginger
¼ cup caster sugar
3 tablespoons almond meal
Zest and juice of 2 oranges
¼ cup crystallised ginger, chopped
70g reduced-fat table spread, melted
1 teaspoon vanilla bean paste
150ml reduced-fat milk
¼ cup maple syrup
2 teaspoons icing sugar, sifted, to serve

Instructions and steps:
1 Preheat the oven to 170°C. Lightly grease a 1–litre capacity baking dish.
2 Sift flour and ground ginger into a large mixing bowl. Stir in sugar, almonds, orange zest and half of the crystallised ginger.
3 Combine table spread, vanilla, milk and egg in a medium bowl with 1 tablespoon of the maple syrup. Whisk into dry ingredients until smooth. Pour the batter into prepared baking dish, and level the surface with a knife.
4 Squeeze orange juice into a jug, then top up with water to make 300ml. Stir in remaining maple syrup. Pour over pudding.
5 Bake for 30–35 minutes and remove from oven.
6 Dust with icing sugar, scatter with extra ginger. Serve warm.
