Instructions and steps:
Preheat oven to 190°C. Line a tray with baking paper. Peel and chop 2 medium beetroots and place on tray. Toss with 1 tablespoon olive oil and 1 tablespoon maple syrup, and sprinkle with 1 teaspoon cumin seeds. Roast for 35–40 minutes, or until tender. Cool slightly. Blitz in a food processor until chunky. Mix blitzed beetroot with Classic hoummos. Serve sprinkled with dukkah and coriander.
