1 cup unsweetened coconut milk, plus extra, to serve
1 teaspoon vanilla bean paste
2 kiwifruit, peeled, diced
250g strawberries, hulled, sliced
2 tablespoons toasted coconut flakes, to serve

Instructions and steps:
1 Combine the quinoa, coconut milk, the vanilla and 1½ cups of water in a large saucepan. Place over a medium heat and bring to a simmer. Reduce heat and cook, stirring porridge occasionally, for 12–15 minutes, or until liquid is absorbed and quinoa is tender.
2 Divide porridge between four serving bowls. Top with kiwifruit, strawberries and flaked coconut. Serve drizzled with a little extra milk, if desired.
