Lime & passionfruit ice cream sandwiches

Full ingredients list:
24 ice cream wafers
1.2 litre no-added sugar 97% fat-free vanilla ice cream
²/³ cup fresh passionfruit pulp (about 8 passionfuit)
3 teaspoons lime zest

Instructions and steps:
1 Grease a 20cm x 30cm slice tin. Line the base and sides with baking paper, extending paper 3cm above long sides of pan. Arrange half of the wafers over base of prepared tin.
2 Place ice cream in a bowl. Set aside for 10 minutes to soften (the ice cream should not be melted). Stir in the pulp and zest until combined. Spoon ice cream over the wafers in prepared pan. Smooth top. Arrange remaining wafers over ice cream in same orientation as before. Freeze for 4 hours, or overnight, until frozen.
3 Using paper, remove the slab of ice cream sandwiches from the pan. Using a sharp knife, cut and trim ice cream sandwiches between the wafers. Serve.
If you don’t enjoy passionfruit seeds, strain the passionfruit mixture and discard the seeds. You will need about½ cup passionfruit juice.
