Full ingredients list:
¼ cup cracked wheat
½ small red onion, finely chopped
½ cup chopped flat-leaf parsley
½ cup chopped mint
1 large tomato, chopped
1 garlic clove, crushed
Zest and juice of 1 lemon
2 small wholemeal Lebanese breads
2–3 tablespoons plain or beetroot hoummos
6 falafels (store-bought or homemade)
2 tablespoons grated reduced-fat tasty cheese

Instructions and steps:
1 Place the cracked wheat in a medium bowl. Cover with cold water and leave wheat to soak for 15 minutes. Drain, squeeze out excess moisture.
2 Return cracked wheat to bowl. Add onion, parsley, mint, tomato, garlic and the lemon zest. Add 1–2 tablespoons of lemon juice and season with cracked black pepper. Mix well. Divide tabouli into two plastic containers. Seal with an airtight lid and refrigerate overnight.
3 When ready to eat at work, place Lebanese bread onto a board or plate. Spread the hoummos down the centre. Heat falafels on a plate between two sheets of paper towel in the microwave for 30–60 seconds. Place falafels onto the hoummos and mash slightly. Top with tasty cheese and tabouli. Roll up, and cut wrap in half to eat.
