1 Heat the olive oil in a large non-stick frying pan or saucepan over medium heat. Sauté (fry while stirring) the onion for 3–4 minutes. Add garlic and cook for another minute, until you can smell garlic changing from raw to cooked.
2 Stir in tomato paste, dried herbs and canned tomatoes. Season with cracked black pepper. Simmer sauce for15–20 minutes, or until thick.
