Step 1Heat the olive oil in a large non-stick frying pan over a medium heat. Cook the beef mince, breaking it up with a spoon, for 4–5 minutes, or until it is browned.
Step 2Add the tomatoes, tomato paste, leek, baby spinach and Italian herbs. Stir, reduce heat to medium-low and simmer for15 minutes, stirring occasionally. Season the sauce with cracked black pepper. Add a further sprinkle of Italian herbs.
Step 3Cook the spaghetti according to packet directions. Drain well. Steam, boil or microwave carrots and the beans for 2–3 minutes, or until they are tender.
Step 4Divide the spaghetti among four serving plates. Top each with bolognese and serve with vegetables on the side. Sprinkle with parmesan and basil leaves.
