Full ingredients list:
500g turkey breast mince
2 teaspoons lemongrass paste
1 teaspoon chilli paste
250g green beans, sliced
1 large red capsicum, sliced
1 x 375g packet rainbow stir-fry vegetables (see Cook’s tip)
2 tablespoons hoisin sauce
1 x 250g packet microwavable jasmine rice
¼ cup chopped roasted peanuts, to garnish

Instructions and steps:
1 Heat 2 teaspoons of olive oil in a large wok over high heat. Stir-fry turkey, breaking up mince with a wooden spoon, for 3–4 minutes. Add lemongrass and chilli paste, and stir-fry for 1 minute.
2 Add the beans and capsicum; stir-fry for 2 minutes. Add the rainbow vegetables and stir-fry for 1–2 minutes, or until they are just wilted. Add hoisin and stir-fry for 1 minute, or until the mixture is well combined.
3 Meanwhile heat rice following packet instructions. Serve the stir-fry on rice and garnish with chopped peanuts.
Rainbow stir-fry vegetables are a mixture of cabbage, carrot, corn, spinach and onion. You can use any stir-fry blend for this recipe.
