Full ingredients list:
2 small chat potatoes
1/2 bunch broccolini, trimmed and halved
3 baby yellow squash, halved
1 teaspoon olive oil
1/2 lemon, cut into 4 wedges
1 tablespoon pine nuts
100g skinless salmon fillet
2 teaspoons fresh dill sprigs, plus extra, to garnish

Instructions and steps:
Step 1Preheat oven to 180°C. Line a baking tray with baking paper.
Step 2Microwave chat potatoes for 2–3 minutes (see tip). Cool and cut into 2–3mm thick slices. Place potato, broccolini and squash on baking tray.
Step 3Add olive oil and squeeze over three of the lemon wedges. Toss to coat. Season with cracked black pepper. Bake for 10 minutes.
Step 4Toss vegetables and sprinkle with pine nuts. Place salmon on top and sprinkle with dill. Return to oven and cook for 10 minutes.
Step 5Serve salmon and vegies with remaining lemon wedge and garnish with fresh dill sprigs, if desired.
To microwave chat potatoes, wash and prick lightly with a fork. Place into a microwave-safe container with 1 tablespoon of water and cover. Microwave for 2–3 minutes.
