Step 1Place the stock, star anise and peppercorns into a small saucepan and set over medium heat. Place chicken into the stock; cover and bring to a simmer, then reduce heat and cook chicken for 6 minutes. Allow the chicken to cool in the liquid.
Step 2Meanwhile, cook the soba noodles according to packet instructions. Drain well and rinse under cold water. Drain and place noodles into a large bowl.
Step 3Remove the chicken from liquid, reserving 1/4 cup of the liquid for the dressing. Roughly slice or shred the chicken. Set aside.
Step 4Make sesame dressing: Place all ingredients in a bowl with the reserved poaching liquid and whisk until combined. Pour dressing over the noodles and toss them well.
Step 5Add chicken to the dressed noodles, along with the capsicum, shallots, coriander, cabbage and apples. Toss to combine. Divide between 4 serving plates and garnish with roasted cashews (if using), to serve.
