Full ingredients list:
2 x 150g wholemeal pizza bases
250g Kent pumpkin,peeled, grated
6 slices prosciutto, halved lengthways
10 baby carrots, scrubbed or peeled, halved lengthways
1/2 teaspoon chilli flakes
100g baby rocket
1 Lebanese cucumber, peeled into ribbons
1/2 cup Kalamata olives
1 tablespoon balsamic vinegar

Instructions and steps:
Step 1Preheat the oven to 200°C. Line two large trays with baking paper.
Step 2Place a pizza base on each tray. Top each of the pizza bases with grated pumpkin, prosciutto and carrots. Scatter over the chilli flakes. Season with cracked black pepper and spray with olive oil.
Step 3Bake pizzas for 20–25 minutes, or until the bases are crisp and the pumpkin and the carrots are lightly golden.
Step 4Meanwhile, combine 80g of the baby rocket with the cucumber, olives and balsamic vinegar.
Step 5Top pizzas with the remaining rocket, then slice and serve with the rocket and olive salad.
