Step 1Combine prawns, sesame oil and 2 cloves of garlic in a bowl; toss to combine. Heat large wok over high heat. Stir-fry prawns, in two batches, for 2–3 minutes, or until golden and just cooked through. Transfer to a bowl.
Step 2Reheat wok over medium-high heat; spray with olive oil. Stir-fry onion for 2 minutes. Add ginger and remaining garlic; stir-fry for 30 seconds, or until fragrant. Add capsicum, beans and peas; stir-fry for 2 minutes. Add rice, kimchi, soy and mirin, and stir-fry for 2 minutes, or until hot.
Step 3Meanwhile, set a large non-stick frying pan over medium-high heat. Pan-fry eggs for 2–3 minutes, or until cooked to your liking.
Step 4Divide fried rice among four serving bowls, and serve topped with a fried egg.
