Step 1Place potatoes in a heatproof bowl. Add ¼ cup of water. Cover with 2 sheets of plastic wrap. Microwave for 6–7 minutes, or until tender. Squash potatoes gently with a potato masher.
Step 2Meanwhile, place flour, egg and breadcrumbs separately in 3 shallow bowls. Lightly coat each pork fillet in the flour, followed by the egg, then breadcrumbs.
Step 3Heat 1 tablespoon of olive oil in a large non-stick frying pan and set over medium heat. Cook the pork schnitzels for 3 minutes each side, or until golden and cooked through. Remove from the pan and cover to keep warm.
Step 4Spray the same pan with oil. Cook garlic for 30 seconds. Add potatoes; cook for 3–5 minutes each side, or until golden.
Step 5Combine the coleslaw, apple and lemon juice in a bowl. Serve with schnitzels and potatoes, and garnish with lemon wedges.
