Full ingredients list:
100g chicken stir-fry strips
1 teaspoon Cajun seasoning mix
1/2 lime, cut into three wedges
1 small zucchini, chopped
1/4 medium red capsicum, diced
1 small carrot, coarsely grated
1 shallot, sliced
125g tub microwavable brown rice, heated
1/2 cup baby spinach

Instructions and steps:
Step 1Season chicken with Cajun mix and juice of 1 lime wedge.
Step 2Spray a medium non-stick frying pan with olive oil and place over a medium heat. Cook chicken strips, stirring occasionally, for 2 minutes.
Step 3Add zucchini and capsicum to pan; cook for 3–4 minutes, stirring occasionally. Then add the carrot, sliced shallot and heated rice. Cook the mixture for a further 2–3 minutes.
Step 4Toss through the baby spinach and allow to wilt. Add the juice of another wedge of lime and season generously with cracked black pepper.
Step 5Serve jambalaya with remaining lime wedge on the side.
Spice it up with hot cayenne pepper instead of usual black pepper.
