400g can no-added-salt chickpeas, rinsed, drained
350g punnet mixed baby tomatoes, halved
1 small red onion, thinly sliced
80g mixed salad leaves
1/2 cup small basil leaves
1 medium avocado, sliced
500g peeled cooked prawns, tails intact
1 tablespoon lemon juice

Instructions and steps:
Step 1Place chickpeas, tomatoes, onion, salad leaves and basil in a large bowl. Toss to combine. Transfer to serving plates. Top salad with avocado and prawns.
Step 2Whisk 2 tablespoons of olive oil and lemon juice in a small jar. Season with cracked black pepper. Drizzle over salad dressing. Serve.
