Full ingredients list:
6 medium portobello mushrooms
200g lean beef mince
1 x 50g sachet pizza sauce
1 small red capsicum, cut into six bite-sized pieces
6 small lettuce leaves
6 cherry tomatoes, halved
6 slices pickled gherkin

Instructions and steps:
1 Preheat the oven to 200ºC. Line a large baking tray with a sheet of baking paper.
2 Remove and reserve stems from the mushrooms. Place the mushroom caps on the baking tray, stem-side up.
3 Chop mushroom stems finely. Place in a bowl with the mince, egg and pizza sauce; mix well. Fill each mushroom cap with mince mixture and bake for 15 minutes, or until mince is browned and cooked through.
4 Top each burger with a piece of capsicum, small lettuce leaf, sliced tomatoes and pickled gherkin. Insert a toothpick to keep burgers in place.
You can add a slice of cheese on top of the lettuce leaves to transform the burgers into cheeseburgers.
