Step 1Using a food processor, blitz half of the rocket, all of the basil, chilli, parmesan and cashews until finely chopped. Add the lemon juice and olive oil, and process until well combined, adding 1–2 tablespoons of warm water, if necessary, to make a pesto-like consistency.
Step 2Meanwhile, cook noodles in a saucepan of boiling water, according to packet instructions, or until al dente. Add beans for the last 2 minutes of cooking time. Rinse under cold water. Drain and set aside.
Step 3Lightly spray a large non-stick frying pan with olive oil and set over medium-high heat. Add prawns, garlic and capsicum, and cook, stirring occasionally, for 2–3 minutes, or until prawns are golden and cooked through.
Step 4Combine noodles, beans, prawn mixture and remaining rocket in a large bowl. Add pesto and toss until combined. Divide the noodles among 4 bowls, and serve.
