4 x 150g boneless firm white fish fillets
2 teaspoons paprika
2 x 250g pouches microwavable 7 ancient grains (see tip)
2 oranges, peeled
2 bunches broccolini
1/4 cup mint leaves, plus extra, to garnish
1 Lebanese cucumber, halved lengthways, thinly sliced
80g mixed baby spinach and red beetroot leaves
Step 1Sprinkle fish with paprika. Heat 1 tablespoon of olive oil in a large non-stick frying pan over medium-high heat. Cook fish, turning once, for 2 minutes each side, or until cooked through.
Step 2Meanwhile, heat ancient grains according to packet instructions. Transfer to a large salad bowl. Segment oranges carefully over the grains to catch any juice.
Step 3Boil or steam broccolini for 2–3 minutes, or until just tender. Add mint leaves, cucumber and salad leaves to grains and orange segments, and toss to combine.
Step 4Serve the fish with grain salad, extra mint and broccolini.
