Step 1Heat half of the oil in a medium non-stick frying pan over medium-high heat. Cook garlic, ginger and fish, stirring occasionally, until fish is just browned and almost cooked through. Remove from pan.
Step 2Meanwhile, prepare noodles according to packet directions. Drain well and set aside.
Step 3Heat remaining oil in same pan over medium heat. Cook beans, stirring, for 2–3 minutes, or until almost tender. Add pak choy, noodles and stir-fry sauce. Cook, stirring, for 2 minutes, or until vegetables are tender and noodles are heated through.
Step 4Return cooked fish to the noodle pan with three-quarters of the sliced shallot. Cook, stirring, for 1 minute, or until heated through. Garnish with remaining shallot, and serve with lime wedges.
