Step 1Preheat the oven to 180°C. Boil, steam or microwave sweet potato for 8–10 minutes, or until tender. Drain and keep warm.
Step 2Spread salmon with mustard and sprinkle with juniper berries. Place lemon slice on top. Wrap in a piece of baking paper. Place on a tray in the centre of the oven and cook for 7–8 minutes, or until salmon is cooked to your liking.
Step 3Meanwhile, place steamed sweet potato, the paprika and a squeeze of lemon juice in a small bowl; mash until smooth. Season with black pepper.
Step 4Steam broccoli and bok choy for 3–4 minutes, or until just tender. Season with cracked black pepper and chilli flakes, if using.
Step 5Serve mustard salmon fillet with sweet potato mash and steamed greens on the side.
