Step 1Heat the olive oil in a large saucepan over medium-high heat. Sauté onion for 5 minutes, or until it is softened. Add garlic, oregano, cumin, coriander and chilli powder. Then cook, stirring, for 1 minute, or until fragrant.
Step 2Add beans, tomatoes, tomato purée and 1/2 cup of water, and bring to the boil. Reduce heat to low and simmer, uncovered, for 10 minutes, or until the sauce thickens and beans have been heated right through.
Step 3Meanwhile, heat over high a small non-stick frying pan. Cook bacon, turning, for 5 minutes, or until golden and crisp. Transfer to a board; finely chop.
Step 4Stir parsley into bean mixture. Then serve beans with bread and bacon crumbs.
