Step 1Cover the rice noodles with boiling water and leave to stand for 10 minutes. Drain.
Step 2Meanwhile, heat 1 tablespoon of olive oil in a large non-stick frying pan over high heat. Pour in eggs and cook until set (about 30 seconds), stirring with spatula. Remove from pan and set aside.
Step 3Heat another tablespoon of oil in the pan. Add sausage and garlic; cook for 2 minutes. Add the prawns and stir-fry for a further 4–5 minutes.
Step 4Add rice noodles to the pan with sambal paste, soy sauce and red capsicum. Cook for 1 minute, using a spatula or spoon to keep the noodles moving, separating the strands.
Step 5Add bok choy, half of the shallots and 1/2 cup of water; cook for 1 more minute over high heat, stirring, until ingredients are evenly distributed. Top with cooked egg and garnish with the remaining shallots.
