Full ingredients list:
150g (about 10) Medjool dates, pitted
150g dried figs (about 10), stems discarded, quartered
1/4 cup pepitas, toasted
1/2 cup pecans, toasted
1/2 cup almond meal
1/4 cup pure cocoa powder, plus 1 tablespoon extra, for rolling
2 teaspoons vanilla extract

Instructions and steps:
Step 1Blend or process dates, figs, pepitas, pecans, almond meal, cocoa and vanilla extract in a food processor until almost smooth and combined.
Step 2Roll rounded teaspoons of mixture into 30 balls, then roll in the extra cocoa. Store truffles in the fridge in an airtight container.
You can omit the extra cocoa for rolling if you prefer, or try rolling the truffles in a little desiccated coconut so they don’t stick to one another.
