Lunchbox: Smashed black bean, avocado and rocket wrap + snacks

Full ingredients list:
1/2 cup (85g) can black beans, rinsed, drained
1 shallot, thinly sliced
1 small tomato, diced
pinch chilli flakes
1 wholemeal wrap
1 tablespoon avocado, mashed (see tip)
1/2 carrot, peeled, grated
15g baby rocket
1 hard-boiled egg, halved and sprinkled with 1/4 teaspoon dukkah
1 cup carrot and celery sticks with 2 tablespoons hoummos

Instructions and steps:
Step 1Place black beans in a medium bowl and mash with a fork, leaving some texture. Stir through the shallot, tomato and chilli.
Step 2Place wrap on a clean work surface, spread avocado down centre of wrap. Top with bean mixture, grated carrot and baby rocket leaves. Roll up. Cover with cling wrap and refrigerate until ready for lunch. Serve wrap fresh or toasted in a sandwich press.
Squeeze a little lemon or lime juice over avocado to prevent it from discolouring.
