700g kent pumpkin, skin on, cut into 8 wedges
2 teaspoons olive oil
1 teaspoon ground coriander
1 fresh long red chilli, seeded, finely chopped
75g reduced-fat feta
2 tablespoons coarsely chopped flat-leaf parsley leaves

Instructions and steps:
Step 1Preheat oven to 180°C. Line a baking tray with baking paper.
Step 2Place pumpkin in a single layer on prepared tray. Drizzle with olive oil, then sprinkle with coriander and half of the chilli. Bake for 30 minutes, or until golden and tender.
Step 3Serve pumpkin topped with feta, parsley and remaining red chilli.
