Meatballs in spicy tomato sauce

Full ingredients list:
400g store-bought lean beef meatballs
1 red chilli, finely chopped
3 garlic cloves, finely chopped
30g fresh ginger, finely chopped
400g can no-added-salt chopped tomatoes
150ml reduced-salt chicken stock
200g flat rice noodles
320g spinach, steamed, to serve

Instructions and steps:
Step 1Heat 1 tablespoon of olive oil in a large non-stick frying pan over high heat. Cook meatballs in batches, for 3–4 minutes until browned all over. Transfer to a large plate, cover loosely to keep warm and set aside.
Step 2Return pan to medium-high heat. Add the chilli, garlic and ginger to pan and cook for 1 minute, or until fragrant.
Step 3Add canned tomatoes and chicken stock to pan; stir gently. Return meatballs to the pan and cover with sauce. Reduce the heat to low and simmer for –10 minutes, or until meatballs are cooked through and thesauce has thickened.
Step 4Meanwhile, cook rice noodles according to packet instructions. Divide noodles among 4 serving plates and top with meatballs. Serve with steamed spinach and garnish with parsley (optional).
