Full ingredients list:
2 teaspoons gelatine
3/4 cup reduced-fat milk
1/4 cup reduced-fat thickened cream
1 tablespoon sugar
1 teaspoon vanilla bean paste
1 cup reduced-fat berry yoghurt
2/3 cup blueberries, fresh or frozen, to serve
fresh mint leaves, to garnish

Instructions and steps:
Step 1Lightly spray 4 ramekins or cups with oil. Sprinkle the gelatine over 4 tablespoons of water in a small dish. Set aside for 10 minutes, until it softens.
Step 2Meanwhile, place milk, cream, sugar and vanilla in a medium saucepan. Heat over a low heat, stirring, until sugar is dissolved and the liquid starts to simmer. Remove from heat and whisk in gelatine, stirring until dissolved. Leave to cool for 10 minutes.
Step 3Whisk yoghurt into milk mixture until well combined. Divide mixture between prepared ramekins. Chill for 2–3 hours, or until set. Meanwhile, microwave the blueberries on high for 30–40 seconds, or until the juices start to run. Stir and chill in fridge.
Step 4Turn out panna cotta or serve in cups topped with blueberries. Garnish with mint leaves.
For a firmer texture, use less water to dissolve gelatine.
