Step 1Combine 1 teaspoon sesame oil, 1 tablespoon soy sauce, 1 tablespoon mirin and garlic in a shallow glass or ceramic dish. Add pork and turn to coat. Cover and set aside in fridge to marinate for at least 30 minutes.
Step 2Preheat a barbecue hotplate or large grill pan to medium-high heat; spray lightly with oil. Grill pork for 2–3 minutes each side, or until cooked to your liking. Transfer pork to a large plate, cover loosely with foil and set aside to rest for 3 minutes.
Step 3Meanwhile, whisk remaining sesame oil, soy sauce, mirin and chilli together in a large salad bowl. Add cabbage, pak choy, grated carrot, mint and radishes, and gently toss to combine. Microwave rice according to packet instructions.
Step 4Slice the grilled pork, serve with salad and brown rice, and garnish with extra mint leaves.
