Step 1Prick potatoes all over, wrap each in two sheets of kitchen towel and microwave on high for 5–8 minutes, or until just cooked through. Cool slightly, then chop into 2–3cm pieces.
Step2 Meanwhile, place a large non-stick frying pan over medium heat and spray with olive oil. Sauté the onions for 2 minutes, or until translucent. Add more oil into the pan and toss in the potatoes. Cook for 5–10 minutes, turning often until the potatoes are golden. Add balsamic vinegar and toss to coat. Remove from pan and cover to keep warm.
Step 3Meanwhile, spray a char-grill pan with olive oil and place over medium-high heat. Cook the steaks for 2–3 minutes each side, for medium, or until done to your liking.
Step 4Steam or boil beans and carrots. Serve steaks with balsamic onions, potatoes, steamed vegies, and with spicy tomato relish on the side.
