Step 1 Preheat oven to 180°C. Line a large baking tray with baking paper. Boil, steam or microwave potato cubes until soft; drain well, mash roughly and set aside.
Step 2 Place a large non-stick frying pan over medium–high heat. Heat olive oil. Add onion and stir until soft. Add spices and stir for 1 minute, or until fragrant.
Step 3 Remove frying pan from heat. Stir reserved mashed potato into onion and spices with remaining ingredients (except tortillas and olive-oil spray), reserving some cumin seeds and sesame seeds.
Step 4 Put 1 cup of the potato mixture in the centre of each tortilla, fold tortilla over mixture and secure with a cocktail stick, if necessary.
Step 5 Transfer wraps to prepared baking tray, spray with olive oil and sprinkle with reserved cumin seeds and sesame seeds; bake for 10 minutes, or until crisp.
Step 6 Garnish wraps with coriander and any remaining seeds; serve.
