Step 1 Coat sirloin steaks evenly on both sides with coriander, mint and chilli rub. Leave steaks to absorb rub for 5 minutes.
Step 2 Meanwhile, immerse green beans in a saucepan of boiling water to blanch for 2–3 minutes, or until just tender; refresh under cold running water, then drain.
Step 3 Place blanched green beans in a salad bowl with remaining ingredients. Season salad with cracked black pepper and toss.
Step 4 Set a grill pan or large non-stick frying pan over medium–high heat. Cook steaks for 2–3 minutes per side (for medium), or until done to your liking. Transfer cooked steaks to a large plate, cover and leave to rest for about 3 minutes.
Step 5 Divide chickpea salad among 4 plates; top each with a coriander, mint and chilli steak; and serve.
