Step 1 Cook penne in a large saucepan according to packet instructions, reserving 1 cup pasta water.
Step 2 Meanwhile, set a large non-stick frying pan over medium heat and spray with olive oil. Add garlic and shallots; cook for 1 minute.
Step 3 Add baby spinach to frying pan; cook, stirring, for 1–2 minutes, or until spinach wilts. Add tomatoes with 1/2 cup of the pasta water.
Step 4 Add salmon to frying pan and poach for 3 minutes, or until just cooked through. Add cooked pasta with a little reserved pasta water to thin sauce, if necessary.
Step 5 Divide pasta among 4 plates; drizzle with lemon-infused olive oil, garnish with chilli (if using) and serve with a lemon wedge.
