Full ingredients list:
1 medium head cauliflower, roughly chopped
1 teaspoon cumin
1 teaspoon smoked paprika
1/4 cup grated parmesan

Instructions and steps:
Step 1 Preheat oven to 200°C. Spread cauliflower on a lined baking tray; spray with olive oil, sprinkle with spices and toss. Roast cauliflower for 20 minutes, or until golden.
Step 2 Transfer cauliflower to a large bowl (or food processor); blend with a stick blender until almost smooth. Add parmesan; blend well. (Add a splash of hot water to thin mash, if necessary.)
Step 3 Season mash with cracked black pepper and serve.
