Full ingredients list:
- 400g Heart Smart beef mince
- 1 medium onion, finely chopped
- 400g can no-added-salt chickpeas, rinsed, drained
- 3 teaspoons curry powder
- 1 cup frozen corn kernels
- 4 light tortillas
- 1/4 cup grated reduced-fat cheese
- 200g baby kale, shredded
- 3/4 cup grated carrot
- 3/4 cup sliced beetroot
- chopped parsley, to garnish

Instructions and steps:
Step 1 Preheat oven to 180°C. Spray 4 small pie dishes with olive oil. Spray a large non-stick frying pan with olive oil; set over high heat. Add mince; cook for 3–4 minutes to evenly brown. Add onion and cook for 3–4 more minutes.
Step 2 Add chickpeas, curry powder and corn to pan with ¼ cup water; cook, stirring, for 5–10 minutes.
Step 3 Press 1 tortilla into each pie dish to form a ‘bowl’ for mince filling; spray with olive oil.
Step 4 Divide filling among tortillas and scatter with cheese; bake for 10 minutes, or until cheese melts.
Step 5 Meanwhile, make salad: place kale in a large bowl. Add carrot and beetroot to bowl; toss.
Step 6 Garnish tortilla mince pies with chopped parsley and serve.
