Full ingredients list:
400g firm white fish fillets, cut into strips
2 teaspoons Cajun spice mix
8 wholegrain tortillas
4 cups baby spinach
1 mango, roughly diced
4 medium tomatoes, roughly chopped
1/3 cup coriander leaves
4 tablespoons low-fat natural yoghurt

Instructions and steps:
Step 1 Preheat oven to 180°C. Line a large baking tray with baking paper. Put fish strips on prepared tray; sprinkle with spice. Bake fish for 6–8 minutes, or until cooked through. Remove tray from oven, cover to keep warm and set aside.
Step 2 Heat tortillas to warm through and top with spinach, mango, reserved spicy fish, tomatoes and coriander; wrap to form fajitas. Drizzle open ends with yoghurt.
Step 3 Secure fajitas with a cocktail stick, if necessary, and serve.
If mango is unavailable, use sliced red and yellow capsicum.
