1/2 cup plain flour
1/2 cup caster sugar
30g reduced-fat table spread, melted, cooled
2 cups skim milk
250g fresh or frozen mixed berries, such as blueberries, raspberries and blackberries
icing sugar, to dust

Instructions and steps:
Step 1 Preheat oven to 160°C. Grease 6 x 1-cup-capacity ceramic or glass baking dishes.
Step 2 Mix flour and caster sugar in a medium bowl. Whisk eggs, table spread and skim milk in a mixing bowl. Whisk egg mixture into flour mixture until batter is smooth and well combined.
Step 3 Divide batter among prepared dishes and scatter with berries. Put dishes in oven and bake for 25–30 minutes, or until just set.
Step 4 Dust berry clafoutis lightly with icing sugar and serve.
To make one large clafoutis, use a 6-cup-capacity ceramic or glass baking dish, and increase cooking time to 40–45 minutes.
Add a scoop of low-fat ice cream or a dollop of low-fat custard to serve.
