Full ingredients list:
2 x 22cm precooked cauliflower crusts
1/4 cup no-added-salt tomato paste
2 cups sliced button mushrooms
250g punnet cherry tomatoes, halved
250g peeled green prawns
1 bunch asparagus, trimmed, halved
1 tablespoon chopped mint, plus extra leaves, to garnish
1 teaspoon lemon zest
1/3 cup finely grated parmesan
3 cups mixed salad leaves
2 tablespoons balsamic vinegar
1 tablespoon olive oil

Instructions and steps:
Step 1 Preheat oven to 200°C. Spread cauliflower crusts with an even layer of tomato paste. Top crusts with button mushrooms, half of the cherry tomatoes, prawns and asparagus, then scatter with mint, lemon zest and parmesan.
Step 2 Place pizzas in oven and cook for 10 minutes, or until cheese is bubbling and golden.
Step 3 Combine remaining tomatoes with salad leaves, vinegar and olive oil in a salad bowl; season with cracked black pepper.
Step 4 Garnish pizza with extra mint, slice and serve with salad.
