Step 1 Preheat grill to high. Line a large baking tray with foil. Place salmon fillets on prepared tray and grill for 2–3 minutes per side, or until cooked to your liking; transfer to a plate, cover and set aside.
Step 2 Meanwhile, set a small non-stick frying pan over medium heat. Add sesame seeds and toast lightly for 1 minute. Place toasted seeds in a small bowl with lemon juice, mirin and tamari to make dressing.
Step 3 Add soba noodles to a large saucepan of boiling water and cook for 3–4 minutes, or until just tender. Rinse noodles under cold running water, then drain.
Step 4 Put cooked noodles in a large salad bowl with carrots, shallots, capsicum and baby spinach; add dressing and toss lightly.
Step 5 Flake reserved grilled salmon and toss lightly with soba noodles and vegetables. Divide salad among bowls and serve.
