Pepper and sesame-crusted salmon with mint peas

Full ingredients list:
2 tablespoons sesame seeds
1–2 teaspoons finely cracked black pepper
4 x 150g skinless salmon fillets
1 cup frozen peas
250g green beans, trimmed, sliced
1 small red onion, finely sliced
1/2 cup torn mint leaves
40g reduced-fat feta, crumbled
lemon wedges, to serve

Instructions and steps:
Step 1 Combine sesame seeds and pepper on a sheet of baking paper. Press salmon fillets into seed mixture to coat on all sides.
Step 2 Spray a large non-stick frying pan with olive oil and set over high heat. Add salmon and cook for 2–3 minutes per side, or until golden and just cooked through. Remove pan from heat, cover to keep warm and set aside.
Step 3 Place peas and green beans in a medium heatproof bowl and cover with boiling water. Leave to stand for 2 minutes; drain.
Step 4 Combine peas and green beans with onion, mint and feta in a large bowl. Divide mint peas among serving plates, top each with a reserved salmon fillet, and serve with lemon wedges.
