2 teaspoons chopped flat-leaf parsley
1 teaspoon chopped dill
1 teaspoon finely grated lemon zest
2 x 150g skinless, boneless salmon fillets

Instructions and steps:
Step 1 Preheat a flat sandwich press. Combine parsley, dill and lemon zest in a small bowl. Scatter herb mixture evenly over salmon fillets.
Step 2 Line base of sandwich press with a piece of non-stick baking paper. Place salmon on paper. Top salmon with another piece of paper and close sandwich press. Grill salmon for 4–5 minutes, or until cooked to your liking.
Fast toasties for your sandwich press
Banana, ricotta and walnut breakfast toastie
Spread 1 slice multigrain bread with 2 tablespoons reduced-fat smooth ricotta. Top with thinly sliced banana and 1 tablespoon chopped roasted walnuts. Dust lightly with cinnamon. Top with 1 slice bread, place in sandwich press and grill until golden.

Top 1 slice multigrain bread or sourdough bread with a large handful of baby spinach leaves, 1 sliced vine-ripened tomato, 1 small can flaked tuna in spring water and 2–3 thinly sliced bocconcini. Top with 1 slice bread, place in sandwich press and grill until golden.
