Full ingredients list:
1 large carrot, peeled
2 zucchini, trimmed
2 medium beetroots, peeled, roughly grated
200g baby spinach
1 small firm ripe avocado, peeled, stoned, sliced
1 tablespoon balsamic vinegar
2 teaspoons extra-virgin olive oil
2 teaspoons sesame seeds, lightly toasted
1 1/2 tablespoons sunflower seeds, lightly toasted

Instructions and steps:
Step 1 Peel carrot into long ribbons using a vegetable peeler. Repeat with zucchini, stopping when you reach the seeds.
Step 2 Place carrot, zucchini, beetroot, baby spinach and avocado in a large bowl. Whisk vinegar and olive oil, pour mixture into salad bowl and toss lightly to combine.
Step 3 Divide salad among serving plates, sprinkle with toasted seeds and serve.
