Full ingredients list:
- 6 eggs
- 1/3 cup low-fat milk
- 120g smoked salmon, torn into 2cm pieces
- 2 zucchini, grated
- 250g punnet cherry tomatoes, quartered
- 2 tablespoons chopped chives (or parsley or dill)
- 50g reduced-fat feta, crumbled

Instructions and steps:
Step 1 Preheat oven to 190°C. Lightly grease a 12-cup muffin pan. Line each muffin cup with a square of baking paper or paper case.
Step 2 Whisk eggs and milk in a bowl. Stir salmon, zucchini, tomato and chives into egg mixture; season with black pepper. Divide mixture among muffin cups; top with feta.
Step 3 Bake for 13–18 minutes, or until frittatas are golden brown. Serve frittatas warm or cooled.
