Step 1 Bring a large saucepan of water to the boil. Add spaghetti; cook according to packet instructions.
Step 2 Meanwhile, squeeze sausage meat out of sausage skins, rolling pieces into rough meatballs.
Step 3 Spray a large non-stick frying pan with olive oil and set over medium heat. Add meatballs to pan; cook, turning, for 5 minutes, or until browned.
Step 4 Add mushroom slices; cook for 5 more minutes. Add tomatoes and carrot; bring to a simmer and cook for 5 minutes, or until sauce thickens. Stir in spinach and bring back to a simmer.
Step 5 Combine meatball mixture with spaghetti; divide among serving plates. Season with cracked black pepper, garnish with parmesan and basil, and serve.
