Full ingredients list:
- 1 1/4 cups plain flour
- 125g extra-light cream cheese
- 4 tablespoons reduced-fat table spread
- 1/4 cup caster sugar
- 500g strawberries, hulled, halved
- 1 tablespoon cornflour
- seeds of 1 vanilla bean
- 1 egg white, lightly beaten
- 2 teaspoons demerara sugar
- 1/2 cup low-fat vanilla yoghurt

Instructions and steps:
Step 1 Place flour, cream cheese, table spread and 1 tablespoon of the caster sugar in a food processor; blend until a dough starts to form. Transfer dough to a lightly floured surface; knead until smooth. Roll dough between sheets of baking paper to form a 32cm disc; refrigerate disc for 30 minutes.
Step 2 Preheat oven to 180°C. Mix remaining caster sugar, berries, cornflour and vanilla seeds in a large bowl. Arrange mixture on dough, leaving a 3cm edge; fold edge up and over mixture. Brush edge with egg white; sprinkle edges with demerara sugar. Bake for 30 minutes, or until golden.
Step 3 Spoon yoghurt onto galette, cut into wedges and serve.
