Spicy beef with pineapple and mint salsa

Full ingredients list:
500g sirloin steak, trimmed, diced into cubes
2 teaspoons Cajun-spice mix
1/2 cup canned pineapple pieces in natural juice, drained
1/4 cup fresh mint, finely chopped
1 cup cherry tomatoes, halved
250g packet microwavable brown rice
400g can no-added-salt kidney beans, drained, rinsed
4 cups baby spinach
1 carrot, peeled, grated

Instructions and steps:
Step 1 Spray a non-stick frying pan with cooking oil and set over medium-high heat. Add steak and spice mixture; stir-fry for 3–4 minutes, or until browned. Remove from heat and set aside.
Step 2 Make salsa: mix pineapple, mint and tomato in a small bowl.
Step 3 Cook rice according to packet instructions. Place rice, kidney beans, baby spinach and carrot in a large bowl.
Step 4 Top rice salad with beef and serve with a side of salsa.
