Caramelised oranges with ginger and walnuts

1/4 cup sugar
2 tablespoons finely chopped crystallised ginger
1/4 cup chopped walnuts

Instructions and steps:
Step 1 Remove peel and pith from oranges, reserving the peel of 1/2 an orange. Cut each orange into thin slices with a very sharp knife. Divide orange among 4 serving bowls and set aside.
Step 2 Remove pith from 1/4 of the reserved peel and slice into very thin strips; set aside.
Step 3 Put sugar and 50ml cold water in a non-stick saucepan set over low–medium heat; bring to the boil and cook for 5–10 minutes, or until caramel turns a deep amber colour. Remove from heat, put pan in the sink and carefully add 100ml hot water. (Hot steam will rise, so cover your hand with an oven glove.) Stir until caramel dissolves; leave to cool slightly. Add crystallised ginger.
Step 4 Pour caramel over orange slices, add reserved peel and leave to cool. Scatter with chopped walnuts and serve.
This dessert is delicious with a dollop of low-fat yoghurt or ice-cream. (If lactose bothers you, use non-dairy varieties.)
