Step 1 Place noodles in a heatproof bowl; cover with boiling water. Leave to rest for 5 minutes, or until tender. Separate noodles with a fork; drain. Rinse under cold running water; drain again.
Step 2 Cut noodles into 5cm lengths; place in a large bowl. Stir in lime juice, fish sauce, half the sugar and half the oil. Stir in carrots and set noodle mixture aside.
Step 3 Combine remaining sugar and oil, garlic, soy sauce and mirin in a large bowl. Add beef and toss to coat. Thread beef onto 12 skewers. Coat a grill pan with a light spray of oil; set over high heat. Cook beef, turning, for 2–3 minutes, or until cooked.
Step 4 Meanwhile, bring a medium saucepan of water to the boil. Add broccoli; cook for 2 minutes, or until just tender, then drain.
Step 5 Add reserved carrot, onion, mint and coriander to noodles; toss gently. Serve beef skewers with noodles and greens.
