Pork and grilled apple quinoa

Full ingredients list:
- 2/3 cup quinoa, rinsed
- 2 small red apples, cored, cut into eighths
- 2 large zucchinis, sliced diagonally
- 500g pork tenderloin, trimmed, halved
- 2 tablespoons pepitas
- 100g reduced-fat feta, crumbled
- 2 spring onions, thinly sliced

Instructions and steps:
Step 1 Cook quinoa in a saucepan of boiling water for 12 minutes, or until tender. Drain and set aside.
Step 2 Meanwhile, place a large chargrill plate over high heat. Chargrill apple and zucchini for 2 minutes, turning once, or until just tender and golden. Transfer into a large, heatproof bowl. Set aside.
Step 3 Reduce heat to medium. Chargrill pork for 10 minutes, turning occasionally, or until golden and cooked to your liking. Transfer pork to a heatproof board and stand for 5 minutes before slicing.
Step 4 Add pepitas, feta, spring onion and quinoa to apple mixture. Stir to combine. Season with black pepper. Serve apple quinoa topped with pork.
To boost the vegies, add some capsicum in step 2.
