Full ingredients list:
- 1 cup plain flour
- 1 cup wholemeal plain flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 4 large ripe bananas, mashed
- 1/4 cup mashed avocado
- 1/3 cup honey, plus 6 teaspoons extra, to serve
- 1/2 cup buttermilk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 12 teaspoons reduced-fat ricotta, to serve

Instructions and steps:
Step 1 Preheat oven to 160ºC. Line a loaf tin with baking paper.
Step 2 Sift flours, baking powder and cinnamon together in a bowl.
Step 3 In another bowl, mix together mashed bananas, avocado, honey, buttermilk, eggs and vanilla. Gently fold in the dry ingredients (do not over-mix).
Step 4 Spoon mixture into tin. Bake for 50-60 minutes, or until a skewer inserted comes out clean. Cool in tin. Serve with extra honey and ricotta.
