Haloumi soft tacos with chimichurri salsa

Full ingredients list:
- 400g can no-added-salt kidney beans, rinsed and drained
- 3 Lebanese cucumbers, halved, deseeded, diced
- 3 large tomatoes, diced
- 3 tablespoons Chimichurri
- cooking oil spray
- 120g haloumi cheese, thinly sliced
- 8 mini tortillas, warmed
- 1/2 cup firmly packed coriander leaves, to serve

Instructions and steps:
Step 1 Combine kidney beans, cucumber, tomato and Chimichurri in a large bowl
Step 2 Spray a non-stick pan with oil and place over high heat. Add haloumi slices and cook for 1 minute each side, or until golden brown.
Step 3 Top each tortilla with some of the chimichurri salsa.
Step 4 Tear haloumi into pieces and divide between tortillas. Scatter tortillas with coriander leaves to serve.
Serve leftover taco mixture the next day with some basmati rice or rice noodles for a quick, satisfying lunch.
Not suitable for those following a no-added-salt diet.
